One of my favorite foods are tacos. I find it an easy meal to cook during the week and it is everyones favorite meal. We eat many different style tacos but one of the most common fillings is mango salsa. Here is my quick and super easy recipe.
1/2 small red onion
handful of cilantro
Wash mango and use a peeler to remove the skin. Important to wash before peeling or cutting because whatever is on the outside ends up on the fruit when you cut into or peel it. Now dice up the mango. Next fine chop up the onion. Remove leaves from the cilantro and finely chop. Should look like this.
Mix mango, onion, and cilantro in a bowl. Squeeze in the lime and stir. Cover and place in refrigerator for at least 20 minutes to allow flavors to mingle. Some times we add jalapeño pepper too. A little bit goes a long way. Always taste first to see how hot the pepper is and add according to how spicy you like it. We typically add 1/4 to 1/2 a pepper. Not to over power the other flavor in our food.
