“P” for Pumpkin Pancakes

Ok, now that Halloween is over. What do you do with all those pumpkins? Roast them for the pumpkin purée. I just love anything pumpkin flavor. Muffins, quick breads, pies, so many options. How about pancakes? Here is an easy recipe the whole family might enjoy.

Pumpkin Pancake Recipe
2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon all spice
1 can 14oz. coconut milk
1 cup pumpkin purée
2 eggs
2 tablespoons safflower oil
1/2 cup maple syrup

Combine dry ingredients (flour, baking powder, salt, cinnamon, all spice) stir to combine. Combine all wet ingredients (coconut milk, pumpkin, eggs, oil, maple syrup) mix together. Then incorporate dry and wet together. Batter is not very thick. Heat a skillet on medium heat. When hot, make pancakes. Enjoy.
